Spicy Lemon Chicken Kabobs
Summertime is grill time! These savory chicken kabob appetizers are made with marinated chicken, a colorful array of fresh summer vegetables of your choosing and have a nice little lemony-pepper kick at the end. These are a perfect start to your next casual dinner party.

Prep time: 20 min
Cook time: 10 min

Ingredients:
• ¼ cup fresh squeezed lemon juice
• 4 tablespoons olive oil, divided
• 3 tablespoons white whine
• 1-1/2 teaspoons crushed red pepper flakes
• 1 teaspoon minced fresh rosemary
• 1-1/2 pounds boneless skinless chicken breasts cut into 1-inch cubes
• 2 medium lemons, halved
• Minced chives
• Veggies of your choice

Directions
1. Combine your lemon juice, 3 tablespoons olive oil, wine, red pepper flakes and rosemary. Add chicken and turn to coat. Refrigerate up to 3 hours.
2. Drain chicken and discard the marinade. Thread chicken and veggies of your choice onto 6 metal or soaked wooden skewers. Grill, covered over medium heat until no longer pink, turning once, 10-15 minutes.
3. Place your lemons on the grill, cut side down. Grill until lightly browned, about 8-10 minutes. Squeeze lemon halves over the chicken, drizzle with remaining old and sprinkle with chives.

Pork Chops with Celery and Almond Salad

Channel your inner chef and wow your guests from your own kitchen with this recipe that is bursting with flavor! Rich and buttery pork is balanced by light, crispy and delicious salad. If you are looking for the perfect summer recipe, this is it.

Prep time: 10-15 min
Cook time: 15-20 min

Ingredients:
• ¼ cup of dried unsweetened cranberries
• 3 tablespoons unseasoned rice vinegar
• 2 1 ½ inch thick bone-in pork rib chop (about 1 pound each), patted dry
• Kosher salt
• 4 tablespoons extra-virgin olive old, divided
• 3 sprigs thyme
• 3 garlic cloves, smashed
• 3 tablespoons unsalted butter, cut into pieces
• 1 small shallot, finely chopped
• 6 large or 8 medium celery stalks, thinly sliced on a diagonal
• ½ cup parsley leaves with tender stems
• 1-ounce Parmesan, shaved

Directions
1. Combine cranberries and vinegar in a small bowl and set aside.
2. Season pork generously with salt and then rub with 1 tablespoon of oil.
3. Heat a medium cast-iron skillet over medium and cook pork chops while moving once or twice to hotter areas of the skillet until the first side is deeply browned, about 6-9 minutes.
4. Turn pork chops and cook until second sides are browned, about 5 more minutes.
5. Working one at a time, set chops on fatty side with tongs to melt and brown fat cap, about 1 minute each. At this point, an instant-read thermometer inserted into the center of each chop should register 135 degrees.
6. Add thyme, garlic and butter to skillet and swirl to melt butter. Tilt skillet towards you so butter pools in the pan and spoon foaming butter over chops continuously until butter is browned, about 1 minute. Transfer pork chips, thyme and garlic to a cutting board and let meat rest while you assemble the salad.
7. Combine shallot and a couple of pinches of salt in a large bowl. Pour vinegar from reserved cranberries into bowl. Whisking constantly, gradually add remaining 3 tablespoons of oil.
8. Add cranberries, celery, parsley almonds, parmesan, and several pinches of salt. Toss to combine.
9. Cut along bones to remove meat from pork chops. Slice meat ½ inch thick.
10. Transfer meat and bones to a platter along with garlic and thyme, then drizzle any accumulated juices left on cutting board over top. Serve with salad.

Blueberry-Pecan Galette

Finish off in style with this tender, flaky and perfectly sweet dessert is truly a summer treat! Easy yet elegant, this blueberry-pecan galette will be the grand finale your meal needs!

Prep time: 30 min
Cook time: 1 hour

Ingredients:
Dough
• ½ cup pecans
• 1 cup plus 2 tablespoons all-purpose flour
• 2 teaspoons sugar
• ½ teaspoon kosher salt
• ¼ teaspoon ground cinnamon
• ½ cup (1 stick) chilled unsalted butter, cut into pieces
Filling and Assembly
• 12 ounces of blueberries (about 2 cups)
• 1 tablespoon cornstarch
• 1 ½ teaspoons fresh lemon juice
• ¼ cup sugar, plus more for sprinkling
• All-purpose flour (for surface)
• 2 tablespoons milk, half-and-half, or heavy cream
Directions:
Dough:
1. Preheat oven to 350°. Toast pecans on a rimmed baking sheet, tossing once, until fragrant and slightly darkened, 10–15 minutes; let cool. Pulse pecans in a food processor until the consistency of coarse meal. Add flour, sugar, salt, and cinnamon and pulse just to combine. Add butter and pulse until mixture resembles coarse meal with a few pea-size pieces remaining.
2. Transfer to a large bowl; drizzle with 4 Tbsp. ice water and mix, adding another tablespoonful of water if needed, just until mixture comes together. Gently pat dough into a 6″-diameter disk. Wrap in plastic and chill at least 1 hour.

*Dough can be made 2 days ahead. Keep chilled or freeze up to 1 month.

Filling and Assembly:
1. Preheat oven to 375 degrees. Toss blueberries, cornstarch, lemon juice, and ¼ cup of sugar in a large bowl.
2. Roll out dough on a lightly floured surface to a 12-inch round. Carefully transfer to a parchment-lined baking sheet. Mound blueberries in center of dough, leaving a 2-inch border. Fold edges, over, overlapping slightly. Brush dough with milk and sprinkle with sugar.
3. Bake palette until crust is dark golden brown and filling is bubbling, 45-50 minutes. Let cool before serving.

*Galette can be baked 1 day ahead. Store tightly wrapped at room temperature.

The exquisite dinner was prepared by Chef Stefano Ceresoli from Piazza 1909 Restaurant, in which he performed a live cooking demonstration.

How To Develop a Home Remodel Timeline

How To Develop a Home Remodel Timeline

When it comes to a remodel timeline and budget, the one thing you need to set is a goal. Most of the time, the timeline relies on the sub-contractors and their availability. We suggest having some flexibility on the timeline. In our experience, there is typically something that comes up that could be more time consuming, more expensive, or both. If you are looking for a way to develop a home remodel timeline, we suggest forming that around these processes.

  1. Planning

Plan everything before getting started. This might seem like a common sense process, but you would be surprised at the amount of people that just start demo-ing before planning anything out. Get rough estimates from your contractors, plan out what needs to be prioritized and what can wait, rent a dumpster, and do not forget to acquire any permits that are necessary to begin the remodel. This could take anywhere from a few weeks to a couple of months.

 

  1. Demolition

This, for some people, is the fun part! Get all of that unwanted and old stuff out of the house. It’s going to look worse before it gets better, but this part of the timeline is the most necessary process. During this process, many things can come to light in regards to issues in functionality, framing, etc. We suggest allowing 3-4 weeks for this process, depending on how big of a remodel you are diving into.

  1. Replacement

If there is any work that needs to be completed that happens behind the wall, that is referred to as “rough-in” work. This all needs to be done before any drywall or flooring is placed in to prevent any damages or rework. Electrical, plumbing, drywall, framing, etc. are all crucial items to pay attention to. Also, have a layout of where you want everything to go. If you don’t know where the refrigerator is going, then how can the electrician know where to put outlets and switches? Once the drywall is in, it’s time to move on to the fun part! This process should take roughly 1-2 weeks.

  1. The Fillers

We like to call this the pretty part. Install the cabinets so you can pick out the fixtures like countertops, sinks, and even the knobs. Door and window surroundings are next. If you are going to have carpeting, you want to make sure that anything hanging should be installed beforehand. Flooring is one of the last things you want to do as to avoid any damage from walking around, paint, falling objects, etc. All in all, this step should be anywhere from 10-20 days.

  1. Clean Up & Finishing Touches

The last thing before moving back in is to install the trim and frame work (if not already) and clean up the debris and loose particles around the home. The last thing you should do after the space has been cleaned is replace the air vents and furnace, if you have one. A professional cleaner should do the trick. All of this should take about 5-10 days, if you have to put in trim and frame work.

 

So that’s it. As we said before, each remodel will require something different, so make sure to take all of these into consideration when attempting to remodel a room in your house.

Surviving the Remodeling Process From Design To Done

The process of remodeling can be long and tiring, so making it as easy as possible on yourself is key to surviving. Here are a few suggestions to take in order to make it smooth and enjoyable.

  1. Choose What You Want to Remodel

This first step might sound like a no-brainer, but for some people, deciding is the hardest part. This can particularly become a tough decision when the home is in need of multiple renovations or remodels. But which part should you take priority? Do you absolutely need that new shower and bathtub, or are updated kitchen appliances and countertops more crucial? It’s all subjective to each person’s needs, but make sure the choice is good for you.

  1. Decide on a Budget

Yes, this one is another obvious step, but sometimes prices can be underestimated immensely. One thing many people do not realize is that a budget is a goal cost that a person is aiming towards. There should always be a bit of wiggle room in every budget, especially when it comes to remodeling. Unexpected issues and costs should be accounted for as well because anything can happen. Having a budget should give the remodeler a good idea of what to aim for and expect including labor costs, new installations, etc. It is better to overestimate than underestimate.

  1. Gather inspo

Gathering inspiration is extremely important. On top of that, you want to make sure that you are researching looks and feels that you like BEFORE consulting a professional. It not only saves you time, it also gives the designer the opportunity and direction to effectively expand on your vision. When you have a vision of what you want, the budget and timing easily be planned.

  1. Timing

Make sure to choose the time of year you begin your remodel. Since the majority of the population does not have the luxury of relocating during a remodel, it makes more sense to think about how to best handle the remodeling havoc. We suggest identifying a time of year when your schedule is less hectic than usual. For most people, fall or spring time seems to be the best option. Since the weather is typically nicer during these times, finding a way to cook and have meals outside will help with the “no kitchen” situation.

 

  1. Combine High and Low

Pair high-end designer options on the pieces you care most about with items of a more budget-friendly cost. We all have those things that we cannot settle on, so blend that with cost-efficient items throughout the space. If lighting is your thing, then spend a good amount on that and match it with less expensive seating options and/or cabinetry.

This task is a lot easier said than done. One thing to do when beginning your search is to ask for referrals and check credentials. Once you check up on those items, sit down and feel out the vibe with each potential contractor. Trust is a hard thing to earn let alone give out, especially with someone that will be in your home for a few months. After reaching a decision, make sure to get everything in writing and develop good communication. Lastly, once everything is complete, if you have new appliances, make sure to have all the warranties on file before parting ways.
